Especially if it is......30 Minute DINNER Plan?
Freestyle cooking is one of my "very special" talents as my kids call it... There is nothing more satisfying then looking into your fridge and pantry......and within 30 minutes having delicious dinner on the table.
This PROSCIUTTO & RICOTTA STUFFED CHICKEN BREAST is one of those winning "on the fly" dinners my family enjoys ever since......that one crazy.....busy night when mama was freestyling it.

This recipe serves 4.

Ingredients:
- 4 Boneless Skinless Chicken Breast
- 8 Thin Slices of Prosciutto
- 1 cup Ricotta Cheese
- 4 Cloves Garlic (minced)
- 1 Tbsp Fresh Italian Parsley (chopped)
- Extra Virgin Olive Oil
STEP 2: Wash and dry chicken breast. Butterfly each chicken breast. Then salt and pepper.
STEP 3: Place two pieces of Prosciutto side by side on top of chicken breast. Spread 1/4 of Ricotta and garlic mixture on half of each chicken breast. Fold it over.
STEP 4: In a skillet heat couple tablespoons of olive oil on medium heat. Place stuffed chicken breast into the skillet and fry until nice and brown about 5 minutes on each side.
STEP 5: Remove from the heat. Let sit for few minutes and serve.
I served this yummy.....juicy and delicious stuffed chicken breast with simple Garlic & Olive Oil Pasta.
