Last winter as a part of promotion for POM Wonderful I came up with a recipe for delicious, light and decadent POMEGRANATE MOUSSE.
Ever since then I've been making Pomegranate Mousse and trying to find different ways of serving this decadent dessert.
I have to admit some of the tries were miss and some of them were a big hit....of course, I don't want to share with you my disappointments and failures......., but I love to share with you my success and victory.

Linda has a cooking blog called My Kind of Cooking and I won her book by visiting her and checking out her recipes.
I love her kind of cooking. Her recipes are simple, delicious and anybody can make them. My 14 year old budding chef already tried few recipes on his own with a great success.
Since I had the cookbook for few months now I thought it was time to try few recipes for myself.
Roasted Pork & Smoked Gouda Sandwich with Balsamic Slaw
Let me just start by telling you that I AM NOT A BIG SANDWICH LOVER.....ask anybody who knows me.....they'll vouch for me....
So why am I sharing a sandwich recipe/idea with you?
Well, the thing is late one night when nobody was home and my stomach reminded me that I skipped my dinner and it was too late to cook I had NO CHOICE, but to make a sandwich.....and this is what happened....this is how Roasted Pork & Smoked Gouda with Balsamic Slaw Sandwich was born.
As I said....NOT a sandwich person at all, but there is something about this concoction...this sandwich that I can't resist and I wouldn’t mind eating few times a week.
STEP 1: On a medium high heat reduce the Balsamic vinegar in half. Take it off the stove and let it cool down (quick cool down in the fridge will do the trick).
STEP 2: In a bowl mixed together shredded red cabbage with balsamic vinegar reduction. Let it rest in the fridge for 5-10minutes.
STEP 3: Spread mayo on bottom pieces of pumpernickel bread. Then put a layer of sliced pork and layer of smoked Gouda.
STEP 4: Take the slaw out of the fridge and place a generous portion on top of the Gouda.
STEP 5: Spread some Dijon mustard on the top bread slices and place on top of the slaw.
STEP 6: Cut in half and enjoy!
This makes 2 sandwiches.
