Chocolate Covered Coconut Macaroons

I've been having few health issues last few weeks so I wasn't able to spend too much time in the kitchen.

Since I am the mom and the meals and treats provider I had to fake it till I make it....in other words I had to use quick and easy recipes to satisfy the masses.

One of the super easy treats to make are my Chocolate Covered Coconut Macaroons.

No need for mixer, no sweetened condensed milk. All you need is basic ingredients from your fridge and pantry.

My kids love these Chocolate Covered Macaroons because they are sweet and chewy ....I love them because they are not as sweet as the Macaroons made with sweetened condensed milk. Who needs the extra calories and sugar? Not this mom.

If you dip them in a dark chocolate the ordinary macaroons will turn into divine special treats.

Ingredients:


  • 4 Egg Whites
  • 200g Sugar
  • 250g Shredded Coconut
  • 1 Tsp Honey
  • 100g Flour
  • Rind from 1 Lemon
     STEP 1: Preheat oven to 285F. Grease and line a cookie sheet.

    STEP 2: In a small pan combine egg whites, sugar, honey and half of the shredded coconut. Mixed together.

    STEP 3: On a medium heat heat up the mixture slightly while stirring. Do not let it get hot or boil. Take it of the heat and stir in the rest of the coconut, flour and lemon rind.

    STEP 4: Use two teaspoons to spoon little heaps of dough onto the cookie sheet.

    STEP 5: Bake for 25-30 minutes.

    If you are going to dip them in a chocolate let them cool down little bit before dipping them.

    For quick dipping I use Baker's Heat & Dip Dipping Chocolate.
