Tarator -  Bulgarian Cucumber Soup

 Everybody has their favorite food or dish for different time of the year.

I love cold soups..... Yes, there is nothing better then a bowl of cold cucumber soup also known as Tarator on a hot summer day.....no matter what anybody says....Cold Cucumber Soup is the total heat buster for me.....

I must admit that not many people around me share my love for Cucumber Soup, but comes summer I make a big bowl of Tarator once a week.
Tarator

Tarator is traditional Bulgarian soup.

When I was growing up my family used to vacation in Bulgaria at the Black Sea every summer and Tarator soup was one of my favorite dishes at the local restaurant.

Since I am very far from the Black Sea I have to make my own Tarator every summer.

This is my version of the best cold Cucumber soup ever.

This recipe serves 6-8.

PRINTABLE RECIPE:

Ingredients:
  • 1 Long English Cucumber (chopped)
  • 1 cup Walnuts (lightly roasted & finely chopped)
  • 4 Cloves Garlic (finely chopped)
  • 2 Tbsp Fresh Dill (finely chopped)
  • 3 cups Balkan Style Yogurt
  • 1 cup Skim Milk
  • Salt
STEP 1: On a frying pan on medium heat roast chopped walnuts for 5-8 minutes.Cool.




STEP 2: In a large bowl combine chopped cucumber, walnuts, finely chopped fresh dill, chopped garlic, yogurt and milk. Mix well together and salt to taste.






STEP 3: Cover the bowl and put it in the fridge to chill. Serve well chilled.




STEP 4: Before serving sprinkle with some walnuts and chopped dill.

 Tip: Many recipes for Tarator puree cucumber and garlic together before mixing it together with the rest of the ingredients. I prefer my Tarator chunky.
