Potato Pancakes Stuffed with Spicy Pork

Stuffed Potato Pancakes

........Stuffed Potato Pancakes......is your mouth watering, yet?

What can be better then Potato pancakes?......Potato Pancakes stuffed with juicy and spicy meat.....

I grew up in a hotel in Slovakia and the restaurant that belonged to the hotel used to serve this specialty dish........ It was Potato Pancakes stuffed with delicious Chicken Livers and something else I no longer recall.

That gave me the idea to Potato Pancakes Stuffed with Spicy Pork.

For the Potato Pancakes you can use my recipe, but cut the ingredients in half. You need only 6 large potato pancakes for this meal.

Ingredients for Spicy Pork:
  • Boneless Pork Loin Chops
  • Salt & Pepper
  • 1 Tbsp Spicy or Dijon Mustard
  • 1 Tbsp Ketchup
  • 1 tsp Chili Powder (optional)
  • 1 Onion (finely chopped)
  • 1 Tbsp Olive Oil
  • 1/4 cup White Wine (optional)
STEP 1: Cut the pork loin into thin strips. Put in in a resealable bowl or Ziploc bag. Add mustard, ketchup, salt, pepper and chili powder. Mix it well till all the meat is covered.Let it marinade in the fridge for 20-30 minutes.



STEP 2: Meanwhile prepare the potato pancake mixture according to the recipe.

STEP 3: In a large skillet heat the oil and saute the chopped onions until they are translucent .Add the marinated pork and on a high heat quickly stir fry the meat for about 3-4 minutes. 



STEP 4: Turn the heat down to medium. Add the wine. Stir and let it saute for 15 minutes while occasionally stirring.



STEP 5: While you are sauteing the meat pan fry your potato pancakes.You will need 6 - 8" or 9" potato pancakes.

STEP 6: When the meat is done divide it into 6 portions. Place each portion on half of the pancake. Fold and serve.



I served it with fresh European style Cucumber and Tomato salad.
