Roasted Pork  & Smoked Gouda Sandwich with Balsamic Slaw


Let me just start by telling you that I AM NOT A BIG SANDWICH LOVER.....ask anybody who knows me.....they'll vouch for me....

So why am I sharing a sandwich recipe/idea with you?

Well, the thing is  late one night when nobody was home and my stomach reminded me that I skipped my dinner and it was too late to cook I had NO CHOICE, but to make a sandwich.....and this is what happened....this is how Roasted Pork & Smoked Gouda with Balsamic Slaw Sandwich was born.

As I said....NOT a sandwich person at all, but there is something about this concoction...this sandwich that I can't resist and  I wouldn’t mind eating few times a week.

PRINTABLE VERSION

Ingredients:

  • 4 pcs. Pumpernickel bread
  • 1 Tbsp Light Mayo
  • Leftover Roasted Pork
  • 4 Slices Smoked Gouda
  • 1 cup shredded Red Cabbage
  • 1 cup Balsamic Vinegar
  • Dijon Mustard
STEP 1: On a medium high heat reduce the Balsamic vinegar in half. Take it off the stove and let it cool down (quick cool down in the fridge will do the trick).

STEP 2: In a bowl mixed together shredded red cabbage with balsamic vinegar reduction. Let it rest in the fridge for 5-10minutes.

STEP 3: Spread mayo on bottom pieces of pumpernickel bread. Then put a layer of sliced pork and layer of smoked Gouda.

STEP 4: Take the slaw out of the fridge and place a generous portion on top of the Gouda.

STEP 5: Spread some Dijon mustard on  the top bread slices and place on top of the slaw.

STEP 6: Cut in half and enjoy!

This makes 2 sandwiches.
