| Ricotta Cheese Ravioli |
I am married to an Italian mama's boy so pasta is a frequent dinner companion at our house.
Lucky for me my husband came into this marriage with lots of family recipes and most of them are very good and easy to make.
This simple and easy to make RAVIOLI recipe comes from my husband's aunt Fortuna DeLuca. Aunt Fortuna lives in Villa Santa Lucia in Abruzzo, Italy and I couldn't be happier to pass her wonderful recipe onto my children.....and of course, you.
PRINTABLE RECIPE
Ingredients for the dough:
- 500g Flour
- 4 Eggs
- Pinch of Salt
Ingredients for the filling:
- 1kg Ricotta Cheese
- 2 Eggs
- Pinch of Salt
- Pinch of Nutmeg
STEP 1: Prepare a rather soft dough with the flour, eggs and salt. Wrap it in a clean towel and leave it to rest for 30 minutes.
STEP 2: Meantime knead the Ricotta cheese with eggs, salt and nutmeg.
STEP 3: When you get a homogeneous mixture without lumps roll out the rested dough and put tablespoon of Ricotta mixture (not too close together) on half of the sheet of the dough.
STEP 4: Fold the empty half sheet of the dough over. Press with your fingers around the rounds of filling to seal the dough.
STEP 5: Cut out the ravioli with a pastry wheel. You can use ravioli maker, but if you don't have one fingers and pastry wheel work just fine.
STEP 6: Cook ravioli in boiling salted water until they swim atop. Strain.
STEP 7: Serve Ricotta Ravioli with your choice of sauce and fresh grated Parmesan cheese.
