Potato Pancakes and Sauerkraut (Zemiakové Placky)

Potato Pancakes is another dish that takes me to my childhood.

Growing up in Eastern Europe one got to eat a lot of potatoes.....I mean whole lotta potatoes....Almost every dish had potatoes in it.

Very popular potato dish were Potato Pancakes in Slovakia called  Zemiakové Placky.

My grandma used to make Potato Pancakes ( Zemiakové Placky) at least once a month for our Meatless Friday.


There are many variations for making Potato Pancakes and every household has their own "secret" recipe and name.

When I make Potato Pancakes (Zemiakové Placky) for my family I use my grandma's recipe....simple...easy......bursting with garlic and marjoram the secret ingredient....tasty....

Potato Pancakes and Sauerkraut (Zemiakové Placky)

PRINTABLE VERSION

Ingredients for Potato Pancakes:
  • 6-8 Xlarge Potatoes (finely shredded should make about 8-9 cups)
  • 2 Eggs
  • 2 cups Flour
  • 1/4 cup Garlic (minced)
  • 1 Tbsp Salt
  • 2 Tbsp Marjoram
  • Oil for frying
STEP 1: In a large bowl shred the peeled potatoes. Squeeze out as much water as you can (some varieties are too watery).

STEP 2: Add the salt, eggs, flour, garlic and marjoram. Mixed well together. If it's not sticking nicely together add little more flour.

STEP 3: In a large frying pan heat the oil. Turn it down to medium. Spoon the mixture into the pan and flatten it a bit making a round shape. Fry it on each side till brown and crispy (about 2 minutes per side).

Of course what kind of Slovak I would be if I didn't serve my Potato Pancakes with Sauerkraut.


Ingredients for Sauerkraut:
  • 1 package of Sauerkraut (I like Hebrew National Sauerkraut)
  • 1 Apple
  • 1 small Onion
  • 1/4 cup White Wine
  • 1 Tbsp Caraway Seed
  • Olive Oil
STEP 1: In a large skillet heat the oil and brown the finely chopped onion. Add the wine and let it reduce to about half. Turn the heat down to medium.

STEP 2: Meanwhile take the sauerkraut out of the package, put in into a colander and rinse with cold water. Let it drain thoroughly.

STEP 3: Add the sauerkraut to the skillet and stir. Cut and core apples into quarters. Add it to sauerkraut. Add the caraway seed and stir. Let it saute for about 5-7 minutes till it's nice and tender, but not soft.





.....there you have it.....my grandma's Potato Pancakes (Zemiakové Placky) with Sauerkraut....
