Potato Sausage Casserole - Francúzske Zemiaky

Potato Sausage Casserole is another dish from my childhood. In Slovakia it is called Francúzske Zemiaky.

This casserole is simple cheese and potato dish with boiled eggs and Farmer's sausage.You can call it deluxe Scalloped Potatoes.

My dad and my grandma had their own variations and techniques to make Potato Sausage Casserole (Francúzske Zemiaky).




Over the years I came up with many variations of my own. When my kids were little I used to make this potato sausage casserole more kid friendly. Now that they are getting older I started to put little twists on it.

My latest variation of Potato Sausage Casserole (Francúzske Zemiaky) is very versatile. You can serve it as a side dish without sausage or you can serve it as a main course. My family loves it as a main dish served with side of pickles or European style cabbage salad.

PRINTABLE VERSION

This recipe makes about 6 servings

Ingredients:
  • 5-6 Large Potatoes
  • 1  Farmer's sausage
  • 5 Hard Boiled Eggs
  • 2 Onions
  • 8-10Mushrooms (optional)
  • 1 1/2 cup Mozzarella (shredded)
  • 1/2 cup Half & Half
  • 1 Egg
  • Salt & Pepper
  • Olive Oil
Peel the potatoes and slice them into 1/2" rounds. Cook them in salted water till about half done (soft, but not quite). Drain them and let them cool down for a bit.

Preheat the oven to 375F. Grease middle size casserole dish.

Peal the onions, cut them in half and slice them into thin slices. Cut the mushrooms into slices as well.

Preheat the oil, saute the onions until golden brown then add the mushrooms. Saute together until nice and brown (or cooked).


Peel the boiled eggs and slice them with round egg slicer. Cut the sausage into 1/4" slices.

You are ready to assemble Potato Sausage Casserole:

  1. Layer 1/3 of potatoes into the casserole dish. Lightly pepper (salt if potatoes are not salty enough).
  2. Layer 1/2 of sauteed onions and mushrooms.
  3. Layer 1/2 of Farmer's sausage (in my vegetarian dish version I change it into fresh spinach)
  4. Layer 1/2 of   boiled eggs
  5. Layer 1/2 of  Mozzarella cheese
  6. Layer another 1/3 of potatoes (lightly pepper)
  7. Layer  rest of the onions and mushrooms
  8. Layer the rest of Farmer's sausage
  9. Layer the rest of boiled eggs
  10. Layer the rest of Mozzarella cheese
  11. Last layer of potatoes. Salt and pepper.
Cover the dish and bake for about 30 minutes.

While baking beat the egg lightly with the Half & Half.

After 30 minutes pour the egg and cream mixture over the Potato Sausage casserole and bake for another 15-20 minutes.

At the end uncover the dish and broil little bit till potatoes go nice and crunchy on top.

Serve with your favorite salad or pickles.
